Healthy Gourmet Tortilla Pizza


Often I find myself craving a deliciously cheesy, hot lunch of none other than Pizza. Aside from the FitnFree Pizzas in an earlier blog (which, by the way, are delicious), I have rarely found a pizza option delicious enough to curb my craving while avoiding the calories, carbs & fat of your standard slice of pizza.

Here is a great, easy, quick recipe for a pizza alternative that anyone with an oven or toaster oven can make. I promise that your taste buds won't be disappointed. I made this for lunch yesterday & used some of the rosemary that I bought for the cream cheese stuffed chicken earlier this week.

To make this recipe healthy, I chose a tortilla that was very high in fiber and protein: Mission Whole Wheat Carb Conscious Tortilla. The cheese is carefully measured out as it's very easy to be a little too generous with such a delectable ingredient (I promise my recipe calls for enough to satisfy your pizza craving).

Healthy Gourmet Tortilla Pizza

1 large Whole Wheat Tortilla
1 oz 2% part skim Mozzarella Cheese
1/8 cup Tomato Sauce (I like spaghetti sauce for the delicious spices)
Fresh Rosemary to Taste (about 1.5 TBSP)

Place tortilla on a standard baking sheet sprayed with cooking spray. Spread the tomato/spaghetti sauce over the tortilla. Sprinkle the mozzarella cheese evenly over the sauce. Finally, sprinkle the fresh rosemary over the cheese.

Place in oven at 300 degrees for 15-20 minutes (ovens may vary). Enjoy!

I've also cooked this recipe with veggies. I find that cooking the veggies to their desired consistency before baking makes a much more delicious pizza. Otherwise, the veggies tend to be a little too crunch. Chicken & pineapple are also delicious!

Thanks Jason! Definitely try it out...you can actually cook it in the microwave too as long as you don't mind the tortilla being chewy rather than crispy.

I do the whole-wheat pita thing, too. Tortillas would be great for the crisp -- kind of like a thin-crust pizza. Yum. Love that you used rosemary!
