
Have you ever heard of this product? Regardless of if you have or have not, it is about to become your best friend. It is especially for those of you out there who love Italian cuisine like Chicken or Veal parmesan; those of you who like chicken fingers on game/bar nights; those of you who enjoy the occasional onion ring. What is the biggest problem with all of these food options? Ridiculously high counts of calories, fat, saturated fat, carbohydrates, cholesterol, and not nearly enough fiber! Plus, the quality of the protein you're eating is rarely high.
Fiber One cereal is my #1 cooking ingredient, especially if I want the consistency and taste of a breaded product in my recipe without the calories, fat & all around bad impact of actually frying my food in fat and oil. Not only does this method of using Fiber One cereal reduce the "bad" parts of friend food, it increases the fiber in your food to create a more balanced meal option. It also really tastes great used in this way!
In an earlier post I shared with you a recipe for baked, healthy onion rings using the Fiber One method. Now here's another one for you! This "not so breaded" chicken tasted really great - made even better by the fact that the flavors did not encompass a gross fatty oil after-taste. I definitely plan to utilize this method as often as possible. Special thanks to Hungry Girl for introducing me to the idea of breading with Fiber one.

"Not So Fried" Chicken (Makes 2 Servings)
1 tsp Emeril's Original Essence
1/4 cup egg substitute
1 TBSP Fresh Rosemary
1/2 cup General Mills Fiber One Cereal
7 1/2 oz uncooked boneless, skinless chicken breast (measured when raw)
salt
Separate the chicken into two equal portions. Set aside.
Place crushed Fiber One cereal in a small bowl. Cut up fresh Rosemary as desired & mix into the crushed Fiber One.
Measure egg substitute into a small bowl. Coat each piece of chicken in the egg beaters & then roll in the crushed Fiber One cereal. Place the coated chicken into a glass Pyrex or oven-safe pan of your choice (sprayed first with cooking spray). Sprinkle small pinches of Emeril's Original Essence over each side of the chicken. Sprinkle small pinches of salt across each side of chicken as well.
Place in oven set to 400 degrees for 22 minutes, flipping half way through. Serve with desired healthy side items and enjoy! I made 2oz whole wheat spaghetti mixed with 1/2 tsp olive oil & artichoke hearts. Delicious, filling meal!

I will have to try this. I do not like the cereal to eat for breakfast but have muffins with it before which I liked.
I definitely agree with your sentiment about cereal for breakfast. I never feel full! (Except for oatmeal, which I love). This is definitely a great baking/cooking ingredient though.
I actually have an awesome pumpkin pie recipe that I'm going to post about next month that uses Fiber One for the crust to make it healthier :)
I'll use cheap angle food cake mix and add fiber one to it (without chopping it up) and make healthy filling muffins.
