Not So Fried Food

One of my favorite food sites, like many of you I'm sure, is Hungry-Girl.com (check it out if you haven't!). Lately, in their newsletters, the Hungry Girl team has given us tons of great ideas for fast food recipe swaps. One that I've seen a few times is the swap for onion rings. I decided today that it was high time I tried out the recipe. First, here it is, courtesy of the team at Hungry Girl:

Hungry-Girl Onion Rings


1 large onion
1/4 cup Egg Beaters
1/2 cup Crushed Fiber One

Preheat Oven to 375 degrees. Cut ends off the onion & peal the top layer. Cut onion into 1/2 inch slices and separate into rings.


Next, fill a small bowl (slightly larger than the rings) with the Egg Beaters. Grind the Fiber One cereal in a food processor to a bread crumb consistency.


One by one, coat the onion rings in egg beaters and cover with crushed Fiber One. Spray baking pan with non stick spray and place onion rings on it. Cook for 20-25 minutes, flipping the rings 1/2 way through.


So I made them. I had a side of barbecue sauce with them as I am almost as in love with BBQ sauce as I am with honey...

In my opinion, this onion ring recipe is REALLY good! All the onion & breaded flavor without the grease and without the guilt. This would be great as a side for home made burgers. It would also be great, made in a larger quantity, for a football party! Two thumbs up, Hungry Girl!

Thanks! The post I'm doing later is another "friend" substitution that is healthy. I should have it up around 530ish EST, def check it out!
