Peanut Butter Cookie Remix

Cookies are a staple of almost every American childhood. From Oreos to Girl Scout to the classic Chocolate Chip cookies, we all have our favorites. Peanut butter cookies have always been a huge weakness of mine. "So?" you might ask "Peanut Butter is delicious and nutritious, in moderation". Well, most peanut butter cookies also have tons of butter, sugar and flour in them. Not to mention that most home baked cookies are far larger than the recommended serving size. According to one of my favorite sites, Calorie-Count, a typical 1 oz. peanut butter cookie has 134 calories and 6.7g fat!

One of my first attempts at healthy baking resulted in the creation of a peanut butter cookie recipe that I have since dubbed "Peanut Butter Cookie Remix". I've reduced the calories & fat, and added a taste of real chocolate in order to create a delicious peanut buttery snack!

So, I thought, how better to start off this new baking blog than with one of my favorite, personally adjusted, cookie recipes? Enjoy, along with pictures! Peanut Butter Cookie Remix


Ingredients:
1/4 cup Egg Beaters (or another egg substitute)
2 TBSP Peanut Butter
1/8 tsp Salt
3 tsp reduced - calorie Butter Substitute
1/4 tsp Baking Soda
1 cup All-Purpose Flour
1/2 cup packed Light Brown Sugar
45 miniature Semi-Sweet Chocolate Chips (approx. 1 tsp)
Cooking Spray

Directions:

Heat oven to 350 degrees. Lightly coat baking sheet with cooking spray

Combine peanut butter & butter substitute until smooth. Add Egg Beaters and blend until smooth. Add brown sugar and blend until smooth.

Combine flour, soda and salt in a separate bowl. Mix well. Combine with peanut butter mixture.

Divide mixture into 15 balls and drop onto cookie sheet. Add three miniature semi-sweet chocolate chips onto each of the 15 dough balls.


Bake in oven for 7-10 minutes. You'll know they're ready when the tops are slightly firm to the touch & the sides are a light golden brown.


Enjoy! (I love these with 1 cup skim milk)

I love that you share calorie counts - it's so helpful.

But I think I will conveniently forget how many calories are in a peanut butter cookie the next time I indulge...

I know, right? I have the hugest sweet tooth too :) With this recipe, at least an indulgence is not as many calories as with regular peanut butter cookies :)

jen i made these this weekend and they were a big hit =) i definitely did something wrong tho and had to throw in a little extra egg since it was really dry...but they were a success in the end! -ALI
