Yummy, Quick, Easy Dinner for One or Several


Last night I finally got around to actually cooking dinner for myself. Between working, studying for the GMAT, getting to know my new roommate, hanging with friends & now this blog, I was resorting pretty consistently to Trader Joe's pre-made meals & the sodium laden Smart Ones & Lean Cuisines. It gets old very fast...

Well, apparently I am able to cook something not only edible, but pretty good...thank goodness! :) It was pretty healthy and very filling! See below for pictures & ingredients.

1 serving Stuffed Chicken: 4 oz boneless, skinless, lean chicken breast. 1 oz light cream cheese, 1/16 cup dried cranberries, fresh rosemary


Trim any excess fat off of the chicken. Cut through the middle of the chicken so that you create a pocket. Next, mix the cream cheese, dried cranberries and rosemary leaves to taste. Stuff the mixture into the center of the chicken. Top the chicken with a pinch of salt, pepper and fresh rosemary. Bake at 400 degrees for 30 minutes, flipping half way through. Lean chicken is a great way to get your dose of protein needed for healthy, strong muscles.


1 serving Sweet Potato: Bake 1 medium sweet potato at 400 degrees for 40 minutes. If not quite done in the middle, stick in the microwave for 2 minutes on high. I ate it plain, but you can add a bit of brown sugar or butter substitute if you prefer. See my post from yesterday for the health benefits of sweet potato's.

1/2 cup Fresh sauteed Spinach: Cook fresh spinach in a non-stick frying pan or a frying pan sprayed with cooking spray. Spinach is high in nutrients & low in calories - great side dish!

Definitely a relatively quick, easy, delicious meal!

Love your blog! Glad I found it! I am curious how those stuffed chicken breast turned out. I have a recipe that sounds similar to yours (with cream cheese), but instead of cranberries, it ads a sun-dried tomato, a slice of prosciutto, and a basil leaf. Quite Italian, of course.

Love the idea of cutting it in half!
