Apple-Doodles!


After apple picking I've had a million apple baking ideas streaming through my head! Tonight I decided to try a spin on the classic Snickerdoodle...a concoction I've dubbed "Apple-Doodles"!

Here is the recipe. They're relatively easy to bake, very pretty, and incredibly tasty! And, they're malleable to personal preference. You can either bake the cookie over the apple slice or place the slice on top of the cookie.

Apple-Doodles

For the Cookies:
1 cup Flour
2 tsp Baking Powder
1/4 tsp Salt
1/2 stick I Can't Believe It's Not Butter
1/2 cup Apple Sauce
1/2 cup Brown Sugar
1/4 cup Splenda
1/4 cup Egg Beaters or 1 Egg
2 tsp Cinnamon
1 tsp Nutmeg
3 fresh medium Apples

*Because of the apple sauce, these cookies are on the chewy side. If you prefer your cookies a little crunchier, use a full stick of butter/butter sub. & leave out the apple sauce. Please note, this is the less healthy option :)

To make the cookie batter: Combine all dry ingredients & all wet ingredients in separate bowls (sugar goes with the wet ingredients). Combine both mixtures together and refrigerate for 1 hour.

Heat oven to 350 degrees. Slice apples into 1/4 inch slices.


To cook apples on top:
Place batter in tablespoon size balls on greased cookie sheet. Bake 3 minutes. Lay 1 slice per cookie of apple & place back into oven. Cook for additional 7 minutes (so that they cook a total of 10 minutes).


To cook apples on bottom:

Place apples on greased cookie sheet. Place tablespoon of batter on each apple slice. Cook for 10 minutes.


**I personally prefer the cookies with the apple slice on top - they're prettier & the cookies have a more present apple taste than the "apple on the bottom" version. The apples stick to the cookies either way.

Thank you! The "healthy" version is a bit more like the consistency of a muffin - so you could make these into muffins :).

More butter would be more cookie-like.

These look great! I'm still working my way through my bag of apples from the orchard, so thanks for the great idea! How was the Splenda in the cookies? I've never baked with it and am very curious to give it a shot...

Hey Jessie -

I really like baking with splenda. The stuff always comes out sweet but not as heavy as when you cook with sugar. I usually do 1/2 splenda & 1/2 brown or sugar in the raw. I really don't like granulated sugar in baking - too processed for me. Halving it with "normal" sugar also guarantees that you won't taste it, which some people don't like.

Also, the "healthy" version is more chewy, like a muffin, as I stated above. Taking out the apple sauce & using an entire stick of butter instead of the amount I listed would give you a more "cookie" consistency.

The "healthy" version is really tasty, though :)

My son loves snickerdoodles but he's not a huge fan of apples. I'll give these a try and see if I can't change his mind.
