Healthy Grilled Cheese? Sign Me Up!

Now that it's officially fall, trees laden with yellow, orange and red leaves, I start to crave a few of my favorite colder-weather treats. Among my favorites: Grilled Cheese.

The deliciously warm, gooey cheese sandwiched between two pieces of (my favorite) whole wheat bread...sometimes with tomatoes...ah, my mouth is watering at the thought! But...problem: cheese, though okay in moderation, is very high in fat. Though I enjoy my occasional Grilled Cheese Sandwich, I often feel too guilty to indulge often...

Enter: two of my FAVORITE products...and the Grilled Cheese lover's life saviors! Allow me to introduce them to you:

Thomas Light English Muffins



Laughing Cow Light Swiss Cheese


These two delicious ingredients make the perfect Grilled Cheese sandwich to satisfy your craving without all of the guilt! Here's how I create my sandwich, but feel free to be as creative as you like!


Guilt Free Grilled Cheese Sandwich

1 Thomas Light English Muffin
1 wedge Laughing Cow Original Light Swiss Cheese
1 slice medium vine tomato


Place muffin in the toaster until it is warm and crispy on the outside, chewy on the inside.

Remove from toaster & immediately spread Laughing Cow wedge across both halves of the muffin. Note: if you do this immediately after removing muffin from the toaster, the cheese will be nice and warm.

Place tomato slice on one side of muffin and close sandwich. Then...of course...enjoy!

You could also add a lean veggie or turkey meat breakfast patty or cook up some egg beaters for a delicious breakfast sandwich! Add ketchup or salsa for additional flavoring!

Not gonna lie, Ludz.. but when it comes to grilled cheese: don't even mess around. Add tomato. Add bacon. Add mouth watering saliva. MAKE IT A GRILLED CHEESE.. AND ENJOY.

Haha, well lil' boozie (aka my friend Suz ;-))...I certainly agree that there is something to be said for your traditional grilled cheese. However, this version is quick, easy, portable (you can easily make it at work, in a dorm room, in a cafeteria etc) and way fewer calories!

To each there own though...I say everyone should enjoy their favorites as long as they do it in moderation :)
