Mango Sunshine Chicken

I was at the Copley farmer's market with my friend Madeleine the other day. If you haven't been, you should absolutely check out a farmer's market. These markets are the best source for fresh produce, great prices & fun new (freshly made at home) products!

On this particular outing we stumbled upon a stand selling home made jams. They had a huge variety of flavors I hadn't heard of before. After trying pretty much every one of their jams, I decided on their Mango Sunshine jam (the full name is "Deborah's Kitchen Mango Sunshine").

With the jam came a chicken recipe that was really delicious! It tasted like a chicken stir fry with less fat & less "stir frying". The mango jam has ginger in it, which is GREAT for chicken! You could probably make this recipe with any jam with ginger in it. Or, you could just buy the stuff I bought here :). All natural, low sugar fruit relish. Delish!

Mango Sunshine Chicken


Marinade Ingredients:
2 tsp Soy Sauce
1 tsp Corn Starch

Sauce Ingredients:
1/3 cup OJ (I used light V8 Splash)
2 TBSP Cooking Wine
1/2 tsp Garlic
2 tsp Corn Starch (mixed in 1 tbsp water)
2 oz jar Deborah's Kitchen Mango Sunshine

This is great over brown rice. Time your rice so that it's done at the same time as the chicken.

Marinade thinly sliced chicken breast, 1 pound, for ten minutes. In the mean time, mix together sauce ingredients.

In a skillet, heat 2 TBSP cooking oil & cook marinaded chicken 4 minutes. Add sauce and simmer until chicken is cooked and sauce thickens.

Layer chicken and sauce over rice. Enjoy! Makes 3 servings.

What's a good substitute if we can't find that particular jam?

Hey Joe - the thing about this jam that really "makes" this recipe is the combination between the mango flavor and the ginger flavor. So, there are a few things you can do:

1) Look for another type of jam that has a mango/ginger flavor

or

2) Find a mango jam that you like and also add fresh ginger or wet ginger from a jar. I do not think substituting powdered ginger would be as good. I know Smuckers & the other leading jam makers all carry at least Mango jam.
