Strawberry Mango Pie


Somehow I managed to ground myself from doing any majorly creative baking for the last two weeks before my exam. Being the day after the exam, I've been going a little crazy in the kitchen & at the grocery store! This week promises to have lots of great baking ideas and recipes! :)

For today, I came up with a new type of pie. Pie is one of my favorite things to bake - you can combine any group of ingredients to taste, cook/cut up/layer them in the most delicious way you can think of (make sure you do this while sampling so that it, in fact, does taste good, create a quick and easy crust from scratch from my recipe, and then bake! There are guidelines but no rules in what you can create! Have you ever seen the movie The Waitress, staring Kerri Russel?



That is what I aspire to do :) So many kinds of pie...I actually have the recipe for the Mermaid pie that she makes in the movie...stay tuned for that one!

I love mangos. They're sweet, delicious, and packed with tons of vitamin c and other great-for-you nutrients. I've wanted to make a pie with mango, but worried in the past about it's tendency towards being a bit tart. I don't like using a lot of granulated, refined sugar in my pies. My solution was to make a Strawberry Mango Pie. The natural sugars from the strawberries add the perfect amount of sweetness to make this one delicious & more healthy pie!

Strawberry Mango Pie

2 Medium Mangos (just barely ripe - not too juicy)
10-15 Strawberries (depending on size)
1 TBSP white flour
2 tsp Brown Sugar
2 Pie Crusts

To make the pie crusts, please refer to my Grape Pie recipe.

For the filling:

Cut up mangos into 1/2 inch cubes. After lining pie bowl with one of your prepared pie crusts, place the mango chunks in a layer (for the bottom of the pie). Sprinkle 1/2 TBSP flour and 1 tsp brown sugar over the mangos.


Slice strawberries and layer across the top of the mangos in any pattern you like. I started from the outside, creating a circle, and continued to layer them in smaller and smaller circles until all of the mango was covered. Sprinkle 1/2 TBSP flour and 1 tsp brown sugar over the strawberries.


Next, slice second pie crust into strips and make a lattice pattern across the top of your pie. The easiest way to do this is to layer the strips in one direction in parallel lines. Then turn the pie 90 degrees clockwise and do the same thing so that you lay them perpendicular to the first set.

Bake in the oven at 375 degrees for 40 minutes, turning 180 degrees 1/2 way through your baking process. Remember, all ovens are a little different. Make sure to be familiar with your often enough to adjust the baking time appropriately.

Allow to cool for 15 minutes & enjoy!

How about a strawberry and chocolate mousse pie? Perhaps you can find a delicious and healthy mousse to make, and you can't go wrong with strawberries :)

Wow strawberry and mango pie. I am going to have to make this for my wife, strawberries and mangoes are her two favorite fruits!

It turned out really well! I'd definitely suggest cooking the mangos first, though. I think it'd make a better consistency for the filling, plus you can taste test with a variety of spices.

The two fruit flavors are really good together, though.

I find that adding a bit of lime zest really adds to the flavour of the mango. I use a touch of cinnamon, too.

Also, rather than putting the sugar and flour on top, to give it a more filling-esque texture you can get slightly riper mangoes and mix the sugar and flour and mango and zest together first, then pour the mixture into the bottom crust.

I haven't tried your recipe yet, only my own spur of the moment invention for a birthday, but I can't wait to try yours! It sounds delicious, particularly with the blueberries, and I plan to pester my mum into buying me more baking ingredients as soon as possible!
